Mexican Beans

in Gluten-Free, Meals and Sides, Recipes

1 Tbs olive oil

1 medium onion, chopped

1 lb grass fed ground beef or turkey (optional)

1 can black beans

1 can pinto beans (only if not using meat)

2 Tbs cumin

2 Tbs chili powder (unless avoiding nightshades – then skip)

Salt to taste

Lime juice to taste

 

Over medium heat, add oil and onion to skillet.  Sauté until soft.  Add meat (optional) and sauté until browned.  Add beans and bean liquid from can, cumin and chili powder.  Simmer on low for 15 minutes to combine flavors.  Add salt and lime juice at the end.  Serve with amaranth tortillas or over salad greens.
