Chicken Stir Fry

in Gluten-Free, Meals and Sides, Recipes

Soy Free Asian Dressing (recipe above) with 2 Tsp kuduzu starch

2 Tbs olive or sesame oil

½ lb chicken breast, sliced into strips

1 medium onion, chopped

2 cups broccoli, chopped

1 large carrot, chopped

2 stalks celery, chopped

1 cup snow peas, red peppers vegetables of choice

Brown rice, cooked

 

Prepare Asian Dressing and set aside. In a large wok, add oil and onion and sauté until onion begins to get soft.  Add chicken and sauté until cooked through.  Add the rest of the vegetables and sauté until cooked but still crisp.  Add Asian dressing at the end – the kudzu will cause it to become thicker.  You may need a double batch of the dressing depending on the size of the stir fry.  Add salt to taste.  Serve over brown rice.
