Marinated Bean Salad
2 cups cooked beans (lentils, black, kidney, and/or garbanzo beans)
½ cup celery, chopped
½ cup parsley, chopped
1 small onion, chopped
2 cloves garlic, minced
1-2 Tbsp olive olive oi1
1-2 Tbsp red wine vinegar
Salt and pepper to taste
Combine beans and chopped vegetables in a large bowl, tossing until well mixed. Add oil, vinegar, salt, and pepper. Mix until beans and vegetables are evenly coated.
