Allergies are the result of a heightened immune response to various external substances. Food allergies can cause an immediate IgE antibody response, triggering the body to release large amounts of histamine which can result in an emergency. Food sensitivities are a delayed IgG antibody response and they are typically not a cause for an emergency. Food sensitivities are difficult to track. Something you ate on Monday may not create an overt immune reaction until Wednesday. Over time, regularly eating a food to which you are sensitive can result in chronic inflammation of the intestinal track, which can lead to what is commonly known as leaky gut.
Leaky Gut Syndrome
Leaky gut syndrome refers to a theory that the gut lining can be weakened or impaired causing increased intestinal permeability which is often seen in gastrointestinal diseases. The mucous lining of our intestines is designed to absorb water and nutrients from our food into the blood stream. Some people have increased permeability in their intestines where their guts are more “leaky” allowing more food proteins into the blood stream. The result of leaky gut is that the intestines are less able to digest and absorb nutrients from food (malabsorption). In severe cases, even the absorption of medications can also be impaired. In some cases, the individual may become reactive to everything they eat. Or they may struggle to mount any immune response at all. Ultimately, leaky gut reduces the resiliency of your entire body so that it is less able to manage other health issues.

Food Sensitivity Testing
We offer IgG antibody panels to 96, 144 and 208 foods through a company called US Biotek Laboratory. Each food panel is a quantitative ELISA analysis of IgG antibodies to a wide variety of foods. Tested food groups include dairy, fish/shellfish, fruits, grains, legumes, nuts, meat, poultry, eggs, vegetables, herbs, spices, and candida antibody. This blood test is collected in-office during a patient visit.
