Detox Pesto

Ingredients

  • 12 oz artichoke hearts (canned in water or cooked from frozen)
  • 4 cups of loosely packaged organic herbs: basil, cilantro, mint, and/or parsley
  • 10-20 cloves of garlic (depending on individual taste)
  • 1 cup olive oil
  • lemon juice, to taste
  • celtic sea salt, to taste

This sauce can be used to roast root vegetables, as a condiment for steamed vegetables, thinned with lemon juice for salad dressing, or as a flavoring for soup.
