Cozy up with this Crockpot Beef Stew!

Ultimate Slowcooker Beef Stew

Ingredients:

  • 3 pounds chuck roast
  • 1 tsp Kosher salt
  • 1/2 tsp coarse ground black pepper
  • 1 yellow onion chopped
  • 4 carrots cut into 2-inch chunks
  • 4 Yukon potatoes chopped
  • 4 cups beef broth
  • 1/4 cup tomato paste
  • 1 bay leaf
  • 1 tsp thyme
  • 4 cloves garlic minced
  • 1 TB Worcestershire sauce
  • 2 TB butter unsalted
  • 2 TB flour (gluten free flours work too!)
  • Chopped cilantro to garnish.

Preheat your crockpot/slow cooker on high heat.  Season the beef with half the salt and all the pepper.  Add the beef to a skillet and brown on each side for 4-6 minutes.  Remove the beef from the pan and add the onions.  Cook the onions for 5 minutes while stirring.  Add the onions, carrots, potatoes, broth, the second half of the salt, tomato paste, bay leaf, thyme, garlic, Worcestershire sauce and the beef to the slow cooker.  Stir all the ingredients until well mixed.  Cook on low for 7 hours.  Add the butter and flour to the slower cooker and stir. Cook for an additional hour or until thickened. Add cilantro for garnish.
