Celery and Date Salad with Raspberry Citrus Dressing
Ingredients
- 3 cups very thinly sliced celery
- 1 firm apple peeled and coarsely shredded
- 1/2 cup finely chopped or thinly sliced dates
- 1/4 cup freshly squeezed grapefruit juice
- 1 cup of fresh or frozen raspberries, crushed or pureed, then strained
- 1/3-1/2 cup light olive oil or safflower oil
- pepper, fresh and finely ground to taste
- seas salt to taste
Combine grapefruit juice, strained raspberry juice and oil to make the dressing. Reserve the raspberry pulp for use in a smoothie. Combine dressing and dates and allow to sit for 20-30 minutes to sweeten dressing. Add sea salt to taste. Combine celery an apple and pour on dressing with dates. Toss and season to taste. Chill and eat.
