Split Pea Soup

3 cups split peas, rinsed plus 10 cups water

3 Tbsp olive oil

2 medium onions, chopped

2 cloves garlic, minced

4 carrots, chopped

6 celery stalks, chopped

6 – 8 ounces ham on the bone (optional)

3 tsp cumin

Salt to taste

 

Bring split peas in water to a boil. Reduce heat and simmer for 45 minutes. Heat oil in a large skillet over medium heat, and add onion. Sauté until golden brown, about 10 minutes. Add garlic and sauté for 3 more minutes. Add onion mixture, carrots, celery, and cumin to peas, seasoning with salt and pepper to taste. Simmer until peas and vegetables are tender, about 30 minutes. Add salt to taste.
