Oven Roasted Vegetables (and Chicken)

3 large carrots

2 parsnips

1 white sweet potato and or yam

1 large onion

2 chicken breasts

2 Tbsp olive oil

Salt and pepper to taste


Preheat oven to 400 degrees. Chop all vegetables into equal size pieces. Toss vegetables and chicken with oil and salt and pepper to coat. Place in shallow baking pan. Bake covered until tender, around 35-40 minutes. Toss vegetables 2-3 times during baking for even roasting.  Remove cover in the end to brown.  **Can be made as a side dish without the chicken.
