Celery and Date Salad with Raspberry Citrus Dressing

Ingredients

  • 3 cups very thinly sliced celery
  • 1 firm apple peeled and coarsely shredded
  • 1/2 cup finely chopped or thinly sliced dates
  • 1/4 cup freshly squeezed grapefruit juice
  • 1 cup of fresh or frozen raspberries, crushed or pureed, then strained
  • 1/3-1/2 cup light olive oil or safflower oil
  • pepper, fresh and finely ground to taste
  • seas salt to taste

Combine grapefruit juice, strained raspberry juice and oil to make the dressing. Reserve the raspberry pulp for use in a smoothie. Combine dressing and dates and allow to sit for 20-30 minutes to sweeten dressing. Add sea salt to taste. Combine celery an apple and pour on dressing with dates. Toss and season to taste. Chill and eat.
